Welcome
During your evening with us, you will enjoy a procession of dishes inspired by the richness of the forests and rivers of Appalachia. We hope this uniquely captures the diverse beauty and quiet abundance of the region.
Petite three
We will begin with a plate of three small bites, each one foretelling what is to come.
The hunt
To honor the generations of farming and hunting throughout Appalachia and to emphasize our shared reliance on the land, we’ve buried venison tartare beneath house made rich soil.
Marsh
Next, a course of duck cured in shio koji and served alongside the marshes bounty alongside what few flowers early frost has spared.
Brook
Following a small surprise, river fish is touched with fire, brushed with forest's bounty, and set upon autumn's color.
Forage
Keeping in mind our love of Southern European cooking, handmade tortellini is served alongside delicately cooked fall game. Paired with an array of nuts foraged from our farm in North Georgia.
DESSERT
Finally, a quenelle of sweet and savory, a truffle of hidden treasure, and a tartlet of late harvest.
